donna l has a nice list for southern california: Here are some of my favorite sushi bars close to where I live and close to where I work.
1. Yoshi Sushi on Mira Mesa Blvd. in San Diego, CA. Very fresh items, knowledgeable sushi chefs, nice selection, pleasant atmosphere, and reasonable prices, especially their all-you-can-eat sushi lunch for $17.95. And their wait-staff is always very courteous, polite, and usually very prompt at taking orders, refilling drinks, etc.
2. Misato, just recently renamed Arigato (not quite sure of spelling), on Ynez Road in Temecula, CA. Atmosphere feels smaller and more cozy than most places, but the food is always excellent, they have many sushi-chef specialties from chefs such as Cyril, and the presentation is always spectacular. The wait-staff is generally prompt and courteous and the portions of sushi are good-sized for the price, representing a good value and much better than many sushi bars I've visited. My only complaint about them is that they're not open mid-afternoon and I often like to eat a late lunch or early dinner and they are closed during those hours.
3. Sushi Camp on Highway-79 South in Temecula, CA. This is my new favorite place and I eat here weekly! They are always polite and courteous and the quality of their fish is outstanding! Their selection is good, even often having Spanish mackerel, and their portions are generous of fish and reasonable on the rice portion (nigiri sushi), unlike some places that load up the rice and skimp on the fish. The sushi chef (Jackie) has fantastic presentation and plating skills and every dish is as attractive as it is delectable. This place also has the widest assortment of special rolls I have ever seen and an especially nice touch is that they almost always
provide some small treat, without charge, such as edamame or cucumber salad or ahi tuna. This is a small restaurant and the atmosphere is rather plain, but the promptness of the staff, the taste of the food, and the value and selection of the items makes it well worth patronizing.
4. Meiko Sushi on Carroll Canyon Road in San Diego, CA. It's been a few years since I have been here, but whenever I have gone, they have been very courteous and prompt and the food has been very fresh and good. Their tuna sashimi is especially good in all respects, price, portion size, freshness, and presentation.
That's all probably more information than you wanted, right? Oh well. Just trying to be helpful. :-)
rickv told us about another hamada in las vegas: Hamada has a place on the Las Vegas strip a few blocks north of the MGM Grand. It is in the Hawaiian food court under the white canvas tent. Nice atmosphere and yummy sushi!

viddirect discovered one in north phoenix: Just went to another good one in the greater Phoenix area..... I think technically it might be N. Scottsdale. It's across from the JW Marriott Desert Ridge in the Desert Ridge Shopping Plaza. The restaurant is called Malee's, and is a combo Thai Bistro/Sushi Bar. Very tasty, very upscale, chic presentation, portions of course Americanized to about twice the size they should be, but other than that, I'd say it was way above average. Malee's Thai Bistro. a recipe and some sushi suggestions for knoxville from rhiannon: I was able to find a wonderful recipe which contains the 2 ingredients you suggested. Here's that spicy shrimp sauce recipe if you want it, it has 7 ingredients
1 cup Kewpie mayonnaise
1/2 cup Sriracha chili sauce
1 tsp ground hot mustard
1 tbsp bottled horseradish ( bottled in water, vinegar and salt only )
(usually have to get this in a gourmet market)
1/8 tsp ground cayenne pepper
2 pieces of fresh garlic ( place in garlic press ) (not the whole garlic clove, unless you REALLY like garlic)
juice from 1/2 of a fresh lime

phoenix az sushi from cgvh: Kanpai - Bell Rd. - Phoenix, AZ -- I have been eating sushi for about 35 years and I have found a sushi bar, Kanpai, that is as close to Japanese style and quality as I ever have found in the US. Owned by two Japanese gentlemen who are very gracious with new eaters, serve extremely fresh fish, with varieties that usually are only found in Japan, i.e., chawan mushi, ankimo and at times shio kara. I would recommend Kanpai to anyone, including the most ardent Japanese person.

That is, until they updated their menus and started charging more than most Manhattan Sushi restaurants! If you are a local, go to Hoshi instead. The atmosphere may not be as good, but the pieces and rolls are great- and far more worth it. -Stacey
imbricate has been generous and told us about a place in kentucky: While living in Lexington, Kentucky, our favorite place for sushi was Seki Restaurant. You'll need a reservation to enter, but it is extremely informal, affordable, and good. Seki Restaurant is owned and run by Mr. and Mrs. Seki (I actually don't know their first names), both of whom appear to be in their late 50's-early 60's. They are both really nice people--I recommend trying it if you're ever in Lexington, but definitely call first. We've had sushi at restaurants all over the U.S. Seki is still our favorite! Tonight we are going to try Tokyo Bowl in Clear Lake, Texas. It was highly recommended on your site.

The sushi bar is right next to a wing place. Apparently, they took a space and divided it with a partition and made two places. They serve the freshest sushi I have ever had and the sailfish sashimi or sushi is a must. I cannot find sailfish anywhere else I have been to, and it's delicious! The owner and sushi chef, Hedai aka "Elvis," is very friendly and helpful in decision-making. After all that delicious sushi, be sure to try the little squares of chocolate that Hedai's wife makes for dessert. They literally melt in your mouth and you're never charged for them!

a detailed review from funboy10120: When in Chicago, please visit Matsuya on Clark St., 3500 Block North (Just south of Wrigley Field) On the east side of the street. Great sushi and sashimi... Try the gomae (Spinach Salad) The best I've ever had! The gyoza (Japanese dumpling) is a total pork treat! The dipping sauce is the best! If you are a fan of pot-stickers, you will love these! The miso soup is to die for, but be careful with the lid on the bowl, if it's steamy it can vacuum seal and end up on your lap and/or shirt... I know, I wore it one evening! The tempura is quite good, but stay away from the chicken and beef teriyaki... fatty and not the best cuts.. The tomato and radish sprout garnish do absolutely nothing for the presentation either! The green tea ice cream is better than most, and don't miss out on the plum wine.. Sweet, in fact very sweet! Delicious and reminiscent of Yom Kippur. Relaxed environment, great, yet unobtrusive service, friendly sushi chefs and a great mix of clientele from straight to gay to generic and eccentric..A great place to people watch! Enjoy the city feel at a reasonable prices! Average extravagant meal for two..$100.00 or less. Branch out, take your kids!
a nice report from lmlapsansky55: I would appreciate the opportunity to report on G-In in Tinley Park Illinois, in the Mall at Harlem Avenue and 183th Street. The preparation and presentation are excellent. The list of Specials really are. The variety of products available for Sushi range from Uni to Ebi. The Special Rolls such as the Spice Hand Roll are a flavorful delight that is made with excellent ingredients. The posted specials are a really great way to start any meal. The Pot Stickers are the best I have had the pleasure to enjoy. The lunch and dinner menu will satisfy any appetite (my favorite is the sake don). Mike and Cindy, the owners and their associates do an excellent job with the preparation and presentation of all their edible art. Their carry out service is great for take home meals.

az sushi recommendations from gang_lu2: Metro Phoenix, AZ. Forget Ichiban or Ra. The closest I've had to real Japanese Sushi is Sushi Ko at 9301 E. Shea Blvd. SCOTTSDALE, AZ. This is where my Japanese friends took me when I was trying to find good Sushi in AZ. Another great place that has good sushi and great Teppanyaki is Kyoto (not a Kyoto Bowl) 7170 E. Stetson Dr. Scottsdale, AZ.

kimbercdp likes a place in detroit: Tried the sushi at Fishbones in Detroit, MI. Very good and fresh. A little on the pricey side though. For an order of a roll and two pieces of sushi, expect to pay around $20.
pbaker9961 has a recipe: Spicy Tabasco Sushi: Tabasco Sauce - Chipolte (squirt on rice after it is put on the seaweed) salmon, cucumber, carrot, jalapeno, and lots of avocado, then top it with a thin line of mayo. Packs a pleasant punch, but not so much to make it painful. Thanks!
karenflam has a fantastic nyc tip: Fukumatsu 212 on East 52nd Street in NYC is great (used to be called Yamaguchi 212 - same address). Good home-made tamago, fresh yellowtail and toro (chu-toro, really). They also make an "Alex" roll with spicy tuna and avocado inside, 2 kinds of eggs (tobiko and masago) on top and cruchy tempura flakes. YUM! Good Udon and salads, too. Kan Pai!

munsok in st louis has a double tip: There is one of the best sushi restaurants in St. Louis. It is hip and cool, with the best sushi chef in town. It is called The Drunken Fish. some knives information from chef brent: I have been using www.japanese-knife.com for awhile. Seems like there are a lot of great knives and tools on www.fine-tools.com. They have a Japanese knifesmith working for them making some different stuff. A lot of really small blades though, nothing I'd recall a chef using in a restaurant. They had some great kiridashi and some saws for doing bamboo work and the like. Korin Trading and their knife site has been my favorite and they've been a great help to me here in a lot of ways, so they get big recommendations from me.

They have the best Aloha spirit, their sushi is fresh, and the atmosphere is tops. IT IS THE BEST IN SAN DIEGO COUNTY! First Street in downtown Ann Arbor, Michigan (734)665-8226. I believe they have the best sushi, hands down. They have 5 pro sushi chefs on staff. They are always friendly and they make the absolute best sushi in the world. This restaurant has been voted best place for sushi in local reviews. They also have very good shrimp and veg tempura, lobster tempura, and absolutely the best prices on lunch specials. Their Miki lunch boat special starts at $7.50, and it's a steal! It comes with shrimp and veg tempura, chicken teriyaki, 3 pieces of California Roll and choice of soup and salad. There is also a pick two entree lunch special at $8.50. This place is a must try, it's heaven on earth.

If indeed you are looking to see and be seen by the upper-class yuppie scene. I sat next to some guys with the Tampa Bay Buccaneers. The decor was unbelievable... not unlike the east-end of Dallas; a bunch of warehouses turned into a nightspot.
The people behind the sushi bar were American college students looking to impress the Tampa Bay Buccaneers.

The mackerel was dry... and they imposed their 'flair' on most side items, that did not allow me to 'season for my own taste'. I won't go back... Still looking in Tampa.

Excellent fresh fish - the chefs only put out a few pieces of each kind at a time, and continually make more fresh sushi. Great prices, good hot buffet too! Senior discount price is available. It's a regular stop for me whenever I'm in the area!
a favorite from richolland: I travel all the major US cities on a monthly basis for work. My wife and I usually have sushi once each week at home, and I usually have sushi at least once a week on the road. I mention all this simply as a means of conveying... I've been to a lot of Sushi Bars across the US. Over the years of traveling to NYC, I've found the best bar to probably be "EAST" in Fort Lee, NJ. But by far the very best in consistent quality and service is a bar called Kinyobee, in Duluth, GA. (an eastern suburb of Atlanta). chris found this one by accident: Sushi Basho: 303-782-4888, 2188 S. Colorado Blvd. Denver, CO 80222. I went to Sushi Basho for the first time today. It turns out the old Japanese restaurant at their same location has shut down, and Sushi Basho opened up there only a few months ago. Wow! I was more than blown away. Incredibly friendly service. I just ordered a simple bowl of chicken soba, and an order of tuna sashimi, and the presentation blew me away, not to mention the taste. Some background here: I grew up in Hawaii. I love sushi, I have eaten sushi at more than 7 places here during my short time in Colorado. I have never been to a place like this in Hawaii, California, or Colorado.... Ever. I have been to several sushi places where the fish is horrid, and tough. I have been to places here in Colorado, like Samurai's, and Japango. While both are good, presentation leaves much to be desired. At one of those places, I have had sushi dumped on a plate in front of me, a roll only partially cut, with some of the fish not even on the sushi itself, (Fallen off). I can't make an apples-apples comparison of Sushi Basho's sushi yet, but I plan on going back on friday for sushi. Taste is important, but sushi is also presentation, something I haven't ever seen on this level, especially from such an inexpensive sushi restaurant. This place is new, and they weren't very busy today, Saturday, So get in there now!

LMLAPSANSKY55 gave us a nice tip: I would appreciate the opportunity to report on Ichiro in Orland Park, Illinois, in the Mall at 96th Avenue and 159th Street. The preparation and presentation are excellent. The list of Specials really are, and the portions are really great. The variety of products available for Sushi range from Tamago to Ebi. The Special Rolls such as Ichiro-Lagrange, White Tiger, and Red Dragon are a flavorful delight that are made with excellent ingredients and tastefully presented. The lunch and dinner menu will satisfy any appetite. Min the owner of Ichiro's and his associates do an excellent job with the preparation and presentation of all their edible art.

ltshep has some great sushi suggestions: Fujiama's of Prescott, Arizona is amazing as is Sakura's of Flagstaff, Arizona. The state is close enough to get some very fresh seafood and the sushi chefs at both restaurants are very friendly and extremely helpful in finding new dishes to try. Go for the eel at both places and I am sure you'll be pleased.
Phoenix, Arizona has a great sushi bar called "Ra" Not sure how the spelling is but this place has a wonderful atmosphere with a very up-class style. The chefs are very careful in their preparations and are very masterful at the show they give in preparations. Price is a little high for AZ in general but still one of the best Arizona has to offer.
Albuquerque, NM also has a great place in Alameda. Its across from the Hooters near a Ci-Cis Pizza place and a TCBY place. This restaurant has very nice booths and great service for a nice dinner or lunch.

Four hungry adults can stuff themselves including full bottles of Sake for less than 100 bucks...been to lots of Sushi places...this one is unbeatable.

bessie_n agrees: I'd like to second the recommendation for "Sushi USA" in Penasquitos, in San Diego CA. I hadn't eaten at Meiki (her old restaurant) in years, but the owner recognized me! The owner's daughter also practices TaeKwonDo right in the restaurant (she's about 7, and some kind of junior black belt champ!) The sushi kicks butt, and they even have a drive through window for to-go orders.

marianned has some nice ones in oc california: I have four places I love. For a small restaurant atmosphere, Niko Niko on Harbor Blvd in Costa Mesa. Good food, reasonable price, lots of it. Three of my favorite sit-down restaurants: #1 Matsu in Huntington Beach, CA. All I can say is YUM. And to top it all off, Matsu has the best servers I have ever encountered. Everything I've had at Matsu is divine! #2 Tommy's Sushi, Tustin, CA great place for a little quiet and a lot of funny guys behind the sushi bar. Can be a little slow on the service. #3 Ichiban, Brea, CA (my husband's favorite too) great food, great prices and great service.

lauralyw has some good news: An update on Choe, he's in El Paso, but may be headed back this way. Yayy! The Wasabi Grill in McKinney, TX is pretty good, but a little pricey. We just went to Sherman, TX, Tokyo Hibachi and Sushi, the food was great and the prices weren't bad, but they really need another chef to help out the one there and a few more waitresses. So if you go plan on a wait, or try to hit it at a time when it will be less busy. Also, in Santa FE, NM, there is Izmi's. It's hard to find, but the food is better than excellent.

kasefase has an hb tip: I have only been eating sushi for the past year now, but I found the best place ever last weekend. It is called MATSU. They have teppan yaki, a dining room, a cocktail lounge, as well as a sushi bar. Their sushi is, by far, the best I have ever had and the most reasonable. My favorite sushi is albacore. Their Crunchy Rolls (tempura and crab meat) were outstanding. The bargain on the menu is the sushi dinner, which comes with miso soup, cucumber salad, 10 pcs. of sushi and 7 pcs. of california roll or spicy tuna roll. What a deal! Their mixed drinks are delicious. I recommend the Pink Chi-Chi, rum and coconut milk and something pink. Absolutely outstanding!! I will definitely be going back very soon. strawhat25 has an indiana tip: I'm from Lafayette, Indiana and everybody knows that there just isn't much here for Japanese restaurants unless we go north to Chicago. HOWEVER, in West Lafayette there is a place called Nakama that is outstanding!! The chef, Asai-san, who has made sushi from Japan to California to here, is a sushi master!! The best part is, THEY DELIVER right to your door!! They have the best sushi and they deliver, you can't beat that.

It tasted like grilled chicken and vegetable soup. I was very surprised and happy to find sushi there. Colorado has come a long way in the last 10 years with Asian food.

Design elements on the inside developed by an up and coming architect from Japan. Beautiful setting, fantastic bar selection, and amenities including private rooms and internet hookup. Staff is amazing! I can't say enough about HIRO! Thanks for a wonderful evening!
